The History of Restaurant Vermala Ursprung
The doors of our restaurant have been open to guests from all over the world since 1971 – creating a popular meeting place for locals and visitors to the valley alike.
It all began with an ambitious idea from our young senior hostess, Rosmarie. After completing her training as a restaurant specialist, the dream of opening her own café was hard to resist. At the time, it seemed a rather crazy idea, as Norbert and Rosmarie already had their hands full with the family screed and flooring business. After much consideration, the official permit finally arrived in 1971 – although not for the café they had envisioned. Instead, permission was granted on the condition that they opened a restaurant with at least 100 seats. During the 1960s, there was great demand for places serving travellers returning from excursions along the Silvretta Hochalpenstraße. And so, the former carpet warehouse was transformed into the restaurant dining room you see today.

Different types of animal husbandry create different levels of marbling in the meat. Local beef has a lower fat content due to the stronger musculature developed on mountain slopes. By contrast, our American steaks are characterised by much finer marbling and a higher fat content. Cattle from our supplier in Nebraska, USA, have an average roaming area of 2 km².
Our dry-aged steaks are cooked over charcoal and seasoned with our own irresistible secret spice blend.
